Lemon Tahini On-Everything-Sauce

Sometimes meal prep just feels like too much. Life takes over and the moment to sit down and plan ahead for the next week passes, gobbled up by often worthy competing priorities. On these weeks, I just make a sauce. It’s a true lunch and dinner bandaid. You can upgrade a bowl of salad, a sandwich, a piece of dry bread(?!), a piece of tofu, chicken breast, you name it!

This sauce came together on one such Sunday. I had something in mind for dinner the next week based off of a post I had seen online that involved a pita bread stuffed with crunchy salad some protein. I’m also going through a Greek yogurt ‘thing’, so that had to be involved.

As soon as I had made it, I wished I had made more. But as with many things I end up loving, I was just coordinating an arranged marriage between the end of a jar of tahini and some flavors I loved, so I didn’t have that option.If you don’t do dairy…

If you don’t do dairy, you can leave out the yogurt or switch for a nut-based one.

Makes ~1 cup of sauce

Ingredients

1/3 cup tahini

1/4 cup icy water (more, as needed)

1/4 cup greek yogurt

1 lemon, juiced

1 tsp garlic powder

1/2 tsp salt

Instructions

1.       Combine tahini and water in a small blender and combine until smooth, adding more water as needed to form a smooth but thick sauce.

2.       Add remaining ingredients and blend again.

3.       Add additional water until desired consistency reached. Taste and adjust salt as needed.
